I really wanted a spicy curry and on Keto curry is allowed ...so I created this one :0)
Organic chicken thighs
1 onion
2 Tsps of Shri lankan curry powder
3 cloves garlic
Little bit of fresh ginger grated
2 chillies .. 1 chopped and added and 1 deseeded
1 stock cube
1 can coconut milk or coconut cream a quarter
A dash of tomato purée
1 or 2 tomatoes
Salt to taste
Ghee or coconut oil 2 tsps
2 knobs of butter at the end (optional)
I also added .. chilli flakes, cumin seeds or powder and coriander powder - 1 tsp of each (optional)
Towards the end add 1-2tsp Gram masala to lift and bring flavours together ... allow to cook for 10-15 minutes
Fry the onion in ghee or coconut oil and add chicken and fry till slightly browned - add the spices and fry - add garlic and ginger and fry -
Add the stock cube whole and coat the chicken thighs - add the tomatoes and the can of coconut milk or coconut cream 1 quarter
Let it cook for 15-20 mins then add tomato purée and green chillies continue to cook - if too dry add a little water - taste for seasoning
Cook for another 30 - 40 minutes or until thick and chicken is cooked then it's ready
Serve with cauliflower rice and natural full fat Greek yogurt and cucumber dip or low carb naan bread
