Cauliflower Rice


I just love making cauliflower rice as you can add any seasonings you like.

Here's my recipe for Cauliflower Rice seasoned with paprika, cumin seeds and cayenne pepper.


Ingredients

Serves 4


1 Large Cauliflower  - washed and grated into grains  (use food processor or a grater) 

Salt & Pepper to taste

1/2 Tsp Garlic Powder

1 Tsp Paprika

1/2 Tsp Cayenne Pepper

1 Tsp Cumin Seeds 

1 Stock Cube 

1 Tbsp Coconut Oil, Butter or Ghee


Method


Heat the oil in a frying pan.  Add the cauliflower and fry until colour changes slightly.  Add the stock cube straight to the pan (no need to dilute with water)  Add all seasonings and fry for 2-3 minutes.  Cover and let the steam cook the cauliflower grains until soft.  Keep checking and stirring.  Serve with chicken curry or any main dish.






Creamy Cauliflower Mash


Ingredients

Serves 4 


1 Large Cauliflower - washed and cut into florets

2 Tbsp grated Parmesan Cheese or to taste

2 Tbsp Cream Cheese or to taste

1 Tsp Garlic Powder 

2 Tbsp Single Cream

1 Tbsp Butter (Optional) 

Salt & Pepper to taste


Method


Fill a pan with water and add cauliflower florets and boil until soft.  Drain well and add to a food processor.  Cover and blend on high.  Add Parmesan cheese, cream, cream cheese, butter, garlic powder and salt and pepper and blend until creamy. Serve with any meat or fish.
