I've been experimenting with this cauliflower mash and with a few tweaks this is really good!


New Extra Flavour Creamy Cauliflower Mash


Ingredients

Serves 4 


1 Large Cauliflower - washed and cut into florets

1 Chicken Stock Cube 

2 Tbsp grated Parmesan Cheese or to taste

2 Tbsp Cream Cheese or to taste

1 Tsp Garlic Powder 

2 Tbsp Single Cream

1 Tbsp Butter (Optional) 

Salt & Pepper to taste


Method


Fill a pan with water not too much and add a stock cube of your choice, I use chicken, then add cauliflower florets and boil until soft and the water dries up a little.

Drain but save some liquid and add a little to a food processor.  Cover and blend on high.  Add Parmesan cheese, cream, cream cheese, butter, garlic powder and salt and pepper and blend until creamy. Serve with any meat or fish.


By adding the stock cube it gives the cauliflower instant flavour so then you have a great base and don't need to add too many other things if you don't want to!


Another tweak is adding sour cream instead of cream which a friend has recommended to me!  Make it your own!
