Chicken Bacon & Mushroom Pie


Pie Crust  (same recipe as pizza crust)


Ingredients 


2 1/2 cups of Almond Flour

2 Eggs

4 tbsps Unsalted Butter

Any seasonings (I use salt, pepper, dried mixed herbs & garlic powder)


(For a change I add in 1/2 cup of flaxseed powder

So I do 2 cups almond flour & 1/2 cup flaxseed flour)


Method 


Add all ingredients to a mixing bowl.  Melt the butter and add to and mix well.

Spread the dough out on a mat or greaseproof paper until it’s large enough to cover the pie.  

Place on the pie filling after it has cooled and tuck the edges in. 


Don’t make the pastry too thick or you’ll need to bake for longer and pie will dry out as I found out! 

Bake at 400F/204C for 12 minutes or  until golden.




Filing

Half an onion

6 Rashers of bacon

3-4 Chicken breasts

Handful of mushrooms

4 Tbsp of Double cream

1/2 Tsp Mixed herbs (optional)

1/2 Tsp Garlic powder (optional)

1 Tbsp Ghee


Method 

Chop half an onion and fry in ghee until  brown.  Add bacon and fry until well cooked.  Add the chicken and spices and continue to cook until chicken is cooked through.  Add in the double cream and simmer for 5 minutes.
